Cupcakes Gift for our friend's daughter Martina.


I made the cupcakes as a gift to our friend who turned 7 today dated May 31, 2012. 



I baked chocolate cake from Hersheys recipe and topped with vanilla buttercream in pink and purple as requested by the celebrant, with home made fondant and hand made toppers. I cant help not to DIY everything it is me.

Special Cake for our New Home



We had a huge problem to our old home in Khalifa City A, i dont wanna elaborate further hence we end up moving to our new place near the old house. Exactly on the day of January 31st we have to head out and find a new villa after received a 48 hours moving out notice for some reason we dont know where to complaint and fight for our rights. 

Anyway God is good we were able to find a new house, a walking distance from the old home, same street thou' with the help of my company cleaners and helpers, my boss sent me a 2 huge trucks and 10 people to help me carry all our stuff and moved to the new place, we started moving things at 3pm and ended at 7pm. The new place is still a mess but at least all my household stuff were kept and in tact to the new house.

Despite of what we've been through, my husband brought me a cheezecake when he got home, the cake is topped with strawberry frosting dusted with gold and silver powder with berries, white chocolate curls and macaroons. 
He got this from his hotel and it was extremely delish. A thanksgiving way for what we've been through during the whole week, a difficult time but at least it was ended and resolved.

My first barbie doll new year cake 


You can successfully make this beautiful doll from the right tools but if you can get substitutes from your kitchen then you don't need to buy the barbie cake set, but for me since I had a chance to purchase from a shop in Paris together with my cookie cutters, I grab the opportunity to get one. 

First, get your half barbie that comes in the box (you can also use the actual barbie toy but make sure to wrap the whole body not to touch the cake once inserted).Roll out fondant and wrap around a tube type of body top.


Bake the cake, the shaped pan can be filled by 2 quantities of  hershey's chocolate cake recipe, which means to fill the 4 pieces of 8 inches pan.
  

Then, once the cake is ready, check and try to insert the barbie top (make sure that you already design the hair, hands and neck). 


 Filled the cake with frosting, I use the normal buttercream frosting.


Finally, insert the other half permanently and started decorating the dress skirt. I made a small flowers out of fondant and placed a pink pearls in between.  The stand of the barbie also comes in the box set.


There you go, my barbie doll cake. I made this for 2 hours + 1 hour handmade fondant + flower cutting design.

My first Christmas cupcake treats to my colleagues.

I made 4 dozens of chocolate cupcakes to everyone in the office regardless that majority of which are Non-Christian in religion. I believe that Christmas is all about sharing and I don't mind the individual religious culture.



Once again, I made the marshmallow fondant and used my lovely cutters. I made a lot of new designs from my cutter lately and I literally roll each fondant in different colors.

I made all of these for 4 hours because fondant making is time consuming and I only have one 12 cupcake set of pan so I have to bake 4 times and make 2 sets of the standard Hershey's chocolate recipe. 


Chocolate Cake Recipe
(adopted from Hershey's website)


Ingredients

  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY'S Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  •  eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  •   "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING (recipe follows)

Directions

  1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
  2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
  3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING. 10 to 12 servings.


    CUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost. About 30 cupcakes.


    "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING

    1/2 cup (1 stick) butter or margarine
    2/3 cup HERSHEY'S Cocoa
    3 cups powdered sugar
    1/3 cup milk
    1 teaspoon vanilla extract


    Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.
    Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

Light Shaped Popeye's Biscuits with a twist 

I am craving for the famous popeyes biscuits and I bought a new set of cookie cutter from Paris so I wanted to try using those and come up to a light butter biscuits. 

RECIPE:
Popeyes Biscuits Copycat

Makes 10 biscuits: 


2 cups all-purpose flour 

1 tablespoon sugar 
1 1/2 teaspoons salt 
1 1/2 teaspoons baking powder 
1/2 teaspoon baking soda 
1/2 cup unsalted butter, cold 
1/2 cup buttermilk 
1/4 cup milk 
melted butter, to brush on top 



Preheat oven to 400 degrees. 

Mix together flour, sugar, salt, baking powder, and baking soda in a medium bowl. 
Slice cold butter into cubes and use a pastry knife or potato masher to cut butter into dry mixture until no large chunks of butter remain. 

Add buttermilk and milk and stir with a spoon until dough forms. 
Roll out to 1/2-inch thick on a floured surface. 

Cut biscuits with a 3-inch biscuit cutter and arrange on a lightly-greased baking sheet. (what i did was i made it flat and cut out using my cookie cutters.)

Bake for 22 to 24 minutes or until tops begin to turn light brown. 
Remove biscuits from the oven and cool for a couple of minutes, then brush each biscuit top with melted butter.

Our Civil Wedding Cake - Mom in Law's Post Matrimonial Party


My mother in law threw a post party held in Chinese Restaurant and gathered close friends. My sister in law baked a 2tier cake and 30 cupcakes for give aways. The top small cake on the cupcake tower were brought into the UAE as we take home the cake. The flavor is our Filipino traditional ube (purple yam) cake covered in white chocolate icing and fondant.

Decorations were silver edible pearls and fresh rose flowers.

Our Civil Wedding Cake at Eiffel Tower 58 restaurant

Keep The LOVE alive 


The moment of the truth has arrived on the date of November 10, 2011 Anton and myself got married in France under the civil ceremonial rite. I don't have my immediate family other than my brother Arvin and friends pie and Mary Ann, while the rest of the guests are all from my husband's side since he grew up in Paris. 

This blog is not meant to share my personal life; but, I am happy to show to all of you about Anton and I's wedding cake baked by 58 Eiffel Tower Restaurant. A simple but very elegant and expensive cake for 20 important guests.





 The chocolate hazelnut cake pre-sliced in rectrangular shape but served first as one cake.
